Micil’s story dates back to 1848, with six generations of the Joyce family continuing the tradition of distilling in Galway. Their passion for Irish spirits and commitment to traditional craft made them the perfect partner for an evening exploring the journey from cask to glass.
Hosted by Jack and Jimín from Micil Distillery, guests enjoyed a guided tasting while discovering more about the family’s history, the distilling process and the character behind each spirit.

Micil Distillery’s story stretches back over six generations of distilling in Galway. Founded by the Joyce family, Micil continues a tradition that began in 1848, when John Joyce established the family’s original distillery in Galway. Today, the family remains committed to producing spirits that honour their heritage while embracing modern distilling techniques.
